Flaxseed & chia breakfast pots!

Chia pudding is a perfect breakfast for on the go, and also a delicious snack! Perfect for keeping in the fridge to have breakfast prepped for the next few days. This recipe includes ground flaxseed which create a smoother consistency.

Chia pudding ingredients
1/3 cup ground flaxseeds
2 Tbs chia seeds
1 & 1/2 cup cashew milk/ any plant based milk
3 tsp honey
1 tsp cinnamon
1/2 tsp vanilla bean
1/4 tsp salt
1 tbs of mixed seeds, including pumpkins seeds & hemp (optional)

Ingredients for the berry jam
1 cup of berries
Squeeze of lemon
Pinch of salt
1 tsp honey (optional)
Handful of mint, finely chopped (optional)

Method
Gently simmer the berries in a pot on the stove until boiled down. Mash until a smoothish consistency then add the remaining ingredients. Add all of the pudding ingredients into a bowl and mix for a few minutes until mostly congealed. In a glass or a jar layer the pudding and the jam. Let sit for at least an hour to allow the chia seeds to fully congeal. Add a dollop of almond butter if desired! (Always).Store in the fridge for about 3 days. Recipe makes 2 servings.
