Anzac biscuits
A healthier, wholefoods, twist on the classic ANZAC biscuit!
Ingredients
1 cup wholegrain oats
2/3 cup desiccated coconut
1/2 cup almond meal
3 tbs coconut oil
1/3 cup maple syrup or sweetener of choice
1 tsp vanilla bean
1 tbs water
1 tsp baking powder
1/4 tsp salt
MethodMix all of the dry ingredients into a bowl and mix well. In a separate bowl, melt the coconut oil, and add the remaining wet ingredients to it. Mix the wet mixture in with the dry mixture and mix well! Spoon out heaped tablespoons of mixture, roll into balls, and then press into biscuit shapes on a baking tray. Bake at 180 degrees, fan bake, for 16 minutes, until golden brown and they spring back when lightly touched. Makes roughly 10 cookies. Enjoy!

If you are wanting this recipe to be gluten free then use gluten free oats of quinoa flakes!
