Lamb Kofta’s with broccoli tabbouleh and yoghurt dressing
Recipe for the lamb
· 1 brown onion, finely diced
· 2 cloves garlic, minced
· 1 red chilli, finely diced
· 2 tsp each of ground cumin, paprika and coriander
· 1 & 1/2 tsp of cinnamon
· 800 grams lamb mince
· Salt and pepper
· Broccoli tabbouleh:
· 1 whole broccoli, stalk and everything
· 1 red onion
· Juice from 1/2 a lemon
· Large drizzle of olive oil
· Large handful of fresh parsley, stalks and all
· 1/2 cucumber, chopped into small cubes
· Large handful of cherry tomatoes, halved
· Salt and pepper
Dressing
· 1 cup coconut yogurt
· Juice of half a lemon
· 2 cloves of garlic
· Salt to taste
· Handful of mint
Method
Mix all of the kofta ingredients in a bowl, mould into sausage shapes and stick a skewer through them, then cook in a fry pan. Place the broccoli and red onion in a whizz and blitz until a rice consistency. Transfer to a fry pan and gently heat until lightly cooked. When done, transfer to a bowl and roughly chop the parsley, and mix through along with the cucumber and tomatoes. Season and drizzle the olive oil! Blend up all of the dressing ingredients, until you get the desired taste. Serve all together and enjoy! Recipe serves 4.
