Green Shakshuka
A delicious way to incorporate greens into your breakfast! This greens eggs recipe is perfect for Sunday morning brunch.
Ingredients
1 & 1/2 cup of peas, boiled, then strained
2 cups of spinach
4 Tbs coconut cream
Juice of 1/2 a lemon
1/4 red onion
Salt and pepper
4 eggs
To garnish (optional)
Mixed herbs
Baby tomatoes
Sprouts or microgreens
Method
Place all of the ingredients in a blender, (excluding eggs) and blend until semi smooth. Transfer to a fry pan and cook on a low heat for 5 minutes, until almost cooked. Make small wells in the green sauce and place 4 eggs in them. Cook until the whites of the eggs are cooked, or until desired! Placing a lid on your fry pan will speed up this process. Sprinkle your garnishes on top! Serve by itself or with homemade zucchini loaf. Serves two.
